What’s Cooking: Homemade Cranberry Relish

Don’t you just love this time of year? Everyone seems to be indoors keeping warm, eating good food, and hanging out with family and friends. And somehow, more time ends up being spent in the kitchen. And we think that is wonderful! It’s a great time to share with others things that we sometimes take for granted, like good food. So with that said, we’d like to share a favorite family recipe with you and your family.

Homemade Cranberry Relish:

1 cup of water
1 large package of cranberries
1 cup of organic raisins, note: golden looks great with this
1 1/2 cups of raw honey
1/4 teaspoon of allspice
1/2 teaspoon of cinnamon
1/4 teaspoon of salt
8 ounces of crushed pineapple drained (I prefer fresh)

Combine water, cranberries, raisins, fresh pineapple, spices and salt in a large sauce pan. Mix well and cook over medium heat(about 10 minutes). As the cranberries pop, add the honey. If you are using canned pineapple, add it now with the honey. You don’t want to pop all the berries, so sometimes I leave some out and add them halfway through the process.
