What’s Cooking? Caribbean Pumpkin Soup for Thanksgiving


Everyone at Lesher Natural Stone, Quartz, & Tile wants to wish you a joyous Thanksgiving with family and friends. Below is a recipe we’d like to share with you.

Caribbean Pumpkin Soup

2 lbs pumpkin(butternut squash or calabash) peeled, chopped into large pieces, and roasted on the grill or in the oven
1 large sweet potato cut into chunks
1 large onion, diced
6 cloves garlic, diced
2 cups chicken stock
Chili Garlic Sauce 1 teaspoon or to taste (key ingredient, see picture below)
2 cups milk
Roasted Pumpkin Seeds (optional for garnish)
Sour cream

Take the skin off the pumpkin. Slice the pumpkin into large pieces. Place the pumpkin and the sweet potato on the grill(best way to do it) or under the broiler until lightly brown and really soft. In a large pot, put 2 tablespoons of olive oil and saute the onion and garlic until soft. Add the chicken stock, grilled pumpkin, and grilled sweet potato and cook for 5 minutes or longer making sure everything is soft. Puree right in the pot with a hand blender or place in a blender. After it is pureed, add the milk and chili garlic sauce to taste. Reheat if needed and serve with a dollop of sour cream, chives or a few pumpkin seeds on top.
